November 2011 Daring Bakers’ Challenge # 58:FILIPINO DESSERTS: Chocolate and cashew nut Sans Riva

ว่าไปแล้วเมื่อเดือนก่อน ปุ๊กมีอะไรมากมายต้องทำแล้วก็ยุ่งเหลือเกิน ทั้งเรื่องน้ำท่วมแล้วก็คนเยอะแยะนะคะ เลยกลายเป็นว่า เลยลืม DB ไปสนิทเลยค่ะ

FILIPINO DESSERTS: CHOCOLATE AND CASHEW NUT SANS RIVAL
ก็เพิ่งมารู้ตัวตอนวันที่ 28 คือผ่านวันที่กำหนดโพสไปแล้ว แบบว่า สนิทจริงๆเลยค่ะงานนี้ เดือนนี้เลยตั้งใจว่า จะไม่ลืมแล้วนะ ก็เลยทำขนมรอบนี้ตั้งแต่อาทิตยืแรกของเดือนซะเลยค่ะ 555 
เดือนนี้ เป็นขอมของฟิลิปปินนะคะ โดยจะมี 2 อย่างให้เลือกคือ Bibingka โดยโฮส คุณ Catherine Enfield ได้ให้ข้อมูลตามนี้ค่ะ " Bibingka is traditionally served during Christmas. It’s similar to other Asian desserts that use rice flour as the base, like mochii. The traditional method of preparation is to line a special clay pot with banana leaves, pour in the batter, top with banana leaf, and then sit it in coals to cook. It is served with a shredded, mild, white cheese and slices of salted egg on top for flavor contrasts. But you can also top it with butter and shredded coconut. You will find the ingredients you need at any Asian market" 
ส่วนอีกสูตรคือ  "Sans Rival cake" โดยมีข้อมูลดังนี้ค่ะ “Sans rival” means “without rival” and any Filipino will argue with you that this is true. Although it’s one of the most popular desserts in the Philippines, its origins are certainly French. In the 1920’s to 30’s there were many Filipinos who went abroad to study. A good number went to France and learned many French cooking techniques which they then brought home. A Sans Rival is made with layers of dacquoise, typically using crushed cashews, with very rich French buttercream frosting. The dacquoise is allowed to bake and dry to a crispy layer so that there is the crunch of pastry and nuts with the buttery, silky frosting. In this regard, a Sans Rival is not very different from some of our past challenges (for us old timers)
ปุ๊กก็เลือกทำเจ้า Sans Rival cake แบบรสช็อกโกแลตค่ะ (อันนี้ไม่ใช่สูตรแบบต้นตำรับ แต่คิดว่ามันน่าจะอร่อยนะคะ อิอิ).ก็คล้ายๆกับ dacquoise ที่คลุมด้วยบัตเตอร์ครีมอะค่ะ คิดว่า คุณพี่สาวน่าจะถูกใจ เค้กออกมาอร่อยค่ะ (thank you Catherine for great recipe)แต่ปุ๊กว่ามันก็ออกจะหวานไปหน่อยนะคะสำหรับปุ๊ก ก็เลยทำการตัดหวานด้วยการโรยผงโกโก้ไปสักหน่อย ก็ช่วยให้รสชาติดีขึ้นเยอะค่ะ
น่าประหลาดใจสุดๆเลยค่ะ ที่เค้กก้อนใหญ่ๆเนี่ยะ หมดภายใน วันเดียวเอง (ปล. ต้องเข้าใจนะคะว่า บ้านปุ๊กไม่ได้มีงานเลี้ยงนะ !!!!!!!!!!) ก็บอกได้เลยใช่หรือเปล่าคะว่ามันอร่อยแค่ไหน อิอิ
PS. แต่ก็ยังแนะนำว่า เสิร์ฟพร้อมกาแฟหรือชาเข้มๆ ก็ดีค่ะ เพราะยังไงก็ยังถือว่าหวานอยู่ ดังนั้นการตัดรสชาติสักหน่อยช่วยทำให้อร่อยมากขึ้นเยอะเลยค่ะ

Chocolate and cashew nut Sans Rival
Servings: 12



Ingredients
10ฟอง ไข่ขาว 
1 cup (240 ml) (225 gm) (8 oz) น้ำตาลทราย
1 teaspoon (5 ml) (3 gm) cream of tartar
¼ cup (60 ml) (20 gm) (2/3 oz) ผงโกโก้ ร่อน
160gm   เม็ดมะม่้วงหิมพานตฺ์ อบแล้วบดละเอียด
100 gm เม็ดมะม่วงหิมพานต์ อบแล้วสับ
ผงโกโก้สำหรับโรยเค้ก

1. เปิดเตาอบที่  325°F/160°C/gas mark 3.
2. ปูกระดาษรองอบลงบนถาดขนาด 30x40 cm 
3. ตีไข่ขาว และครีมออฟทารทาร เข้าด้วยกัน แล้วค่อยๆเติมน้ำตาลลงไป ตีจนตั้งยอดแข็ง แววสวย 
 4. ตะล่อมถั่ว160g และผงโกโก้ ลงไป



5. เทลงในพิมพ์ แล้วเกลี่ยให้เรียบ จนถึงขอบ
6. นำเข้าอบ ประมาณ 45 นาทีหรือจนสีสวย นำเมอแรงค์ออกจากพิมพ์ดึงกระดาษออก แล้วพักให้เย็น  
7. เมื่อเย็นแล้วตัดเป็น 4 ชิ้นเท่าๆกัน



Crème au beurre or French Buttercream
5 ไข่แดง
1 cup (240 ml) (225 gm) (8 oz) น้ำตาลทราย
1/4 cup (60 ml) น้ำ
1¼ cup (300 ml) (2½ sticks) (285 gm) (10 oz) เนยจืด
เกลือเล็กน้อย
 2 oz (55 gm) unsweetened chocolate, ละลาย






1. ใส่น้ำตาลและน้ำลงในหม้อ น้ำขึ้นตั้งไฟปานกลาง
เมื่อน้ำเชื่อมอุณหภูมิประมาณ 100°C, ให้เริ่มตีไข่แดง




 2.เมื่อน้ำเชื่อมร้อนถึง 117°C
ค่อยๆเทน้ำเชื่อมลงในชามไข่แดง ตีด้วยความเร็วสูงจนน้ำเชื่อมหมด แล้ว ลดความเร็วลงเป็นปานกลาง ตีไปเรื่อยๆจนเย็น 
 ใส่เกลือ แล้วตีให้เข้ากัน ใส่เนยลงไปทีล่ะ 1 ช้อนโต๊ะ แล้วตีที่ความเร็วสูง รอบละประมาณ 1-2 นาที จนเข้ากันดี 



ใส่ช็อกโกแลตละลาย ตีให้เข้ากัน



วางเมอแรงค์ลงบนถาด ทาบัตเตอร์ครีมให้ทั่ว แล้วทับด้วยเมอแรงค์ ทำแบบนี้จนหมด
ทาบัตเตอร์ครีมคลุ่ให้ทั่ว แล้วตกแต่งด้วย ถั่ว
โรยผงโกโก้ แล้วนำเข้าแช่เย็นจนพร้อมเสิร์ฟ

  2. ขนมน่ากินมากคะ รูปก็สวยมากด้วย จะว่าไปคุณปุ๊กเปลี่ยนกล้องหรือเปล่าคะเนี่ย เพราะดูรูปต่างไปจากเดิมเยอะเลยคะ เอ..หรือว่าเราคิดไปเอง คริๆ
